Focaccia con i Fichi, Prosciutto, Parmigiano e Menta
Focaccia with Fig, Ham, Parmesan Cheese & Mint

loves pizza- delicious, easy and fun! How about something a little
different though? Fresh, cheeky and funky, with a Mediterranean twist?
Now you're talking! And I would be so bold as to claim that it sure
looks good too!
I was planning on making a regular pizza this evening, cooking up
a basic tomato sauce and improvising a little in some way to do
something cool (whatever that may have ended up being!)... but I also
had one solitary little fig left over in the fridge and a couple of
slices of prosciutto... and I decided that little bit of improvisation
might well turn into a little bit more!
Here
are a couple of great flavors for you and if you turn to a pre-made
dough as I did, you can turn them into a really quick, memorable and
delicious Summer meal in just a few minutes. I began by spreading the
base with a nice, chunky Dijon mustard, which I then sprinkled with a few
slices of parmesan cheese- this will melt and hold everything nicely in
place. Sprinkle with a little finely chopped mint and then add the fig
slices, spreading them out evenly over the whole surface.
Next, the prosciutto, cut into thin ribbons and draped evenly
around the figs. Scatter more parmesan slices on top and pop it into the
oven at your highest setting for 10 minutes.
After
10 minutes, remove from the oven and add some finely sliced Spring
onion and a little more fresh mint, a little salt and pepper (or
peperoncino if you prefer!) and the lightest trickle of honey- just a
little! Turn on your broiler and pop it back in for 2-3 minutes...
After
that blast of heat from above, the focaccia will be a wonderful
golden-brown, fruity, crispy and delicious! Probably faster than driving
out to the nearest pizza joint, OR having one delivered... and
definitely a lot more fun! Do it yourself and enjoy something special-
you deserve it!
