Pineapple, Mint & Ginger Granita
Granita, my favorite kind of ice in Sicily, fresh, tangy and refreshing with no fat or cream or nonsense... This is the real kind of summer food that we need when it gets this incredibly hot!
As the pineapple turned out to be a very, very sweet one this time, I did without sugar this time around, but that is a choice and a decision that I will leave up to you to decide when you make your own!
In order to make two small servings, I needed half of a pineapple, plenty of mint and 2-3 slices of fresh ginger... easy-peasy!
Just look at that color and I am sure you will be able to sense how wonderful this stuff must taste! And then go buy yourself an pineapple to try it for yourselves!
Pop the pineapple, cut into chunks, into the bottom of a container, make sure to add lots of fresh mint and a couple of inches worth of freshly chopped ginger... Whizz through your blender and keep on mixing until you have a nice, smooth, bright green purée.
There's a lot of goodness going on it there! Have a taste and see if you need to add any sugar... If so-do so, but if not, into the freezer it goes for 30 minutes.
After 30 minutes, stir through the ice crystals as they form and return it to the freezer of a further 30 minutes... Repeat this for the next 2- 3 hours and by that time, the mix should be smooth and easy to scoop. If it freezes solid, scrape with a spoon, mash together and re- freeze.
This is a very simple refreshment... Smooth and tangy at the same time, with the freshness of mint on top... What's not to like?
