Fig, Kohlrabi, Mozzarella & Arugula Salad with Sumac
Summertime = salad-time... even for me and I am not the greatest salad fan, I have to admit. Unless that is, it is something a little unusual and flavorful and a change from the everyday options...
The typical thing to make in the Summer months is a Caprese salad, the classic tomato, basil and mozzarella combination that everybody knows and loves... But there is plenty more you can do with that mozzarella you know!
The ingredients were, 1 kohlrabi, 2 figs, 1 ball of mozzarella, a couple of handfuls of arugula and a tablespoon of sumac for a tangy and vibrant flavor... That's all good stuff!
I love the way that Sumac tastes, with a tangy astringent edge to it, you can basically replace vinegar or lemon juice in recipes with this, which is great fun!
Prep-work is simple... First of all, peel and cut the kohlrabi into french-fry sized sticks...
Then sprinkle with salt, drizzle with honey and olive oil and then give them a generous sprinkle of Sumac... Yum!
Allow to marinate for 10-15 minutes and pour-off any excess moisture given off.

Serve the kohlrabi sticks on top of a bed of arugula...
...and then add the mozzarella and the figs, which I cut into quarters. Arrange decoratively, season with salt and pepper, add a generous sprinkle of sumac and a drizzle of olive oil and enjoy!
Salad does NOT need to be boring!

Look really yummy. And it makes me regret not buying those figs I saw in the market over the weekend. One (slightly embarrassing) question: what is sumac?
ReplyDeleteGlad you like it Frank and no need to be embarrassed... There's nobody else here except you and me ;-) Sumac is the powder/spice, made from the dried and ground, red husk of the nutmeg. It tastes slightly astringent and vinegary, making it a great addition to salads and summer dishes... You should try it out! Best wishes, Francesco :-)
