Apricot, Almond & Pistachio Pancake


Pancakes are of course a perfect choice at breakfast time, but there is no need for them to be the boring old, same old types that we always make... No, no! Dare to be different and have a bit of fun!

See this beautiful specimen here? Looks pretty gorgeous doesn't it? Amazingly, it tastes even better than it looks... and even more amazingly... It was made using just 1 egg!


Of course I know you are not surprised in the slightest to hear that I only used 1 egg to make this nice, generous single serving for breakfast... Because I almost always do... But still! I think it's worth reminding you all that you really don't need to have a lot to make a great dish, nor do you need to eat a lot to have a satisfying meal... More importantly, it is a good portion of imagination that will get you the best results!


Total ingredients for 1 persons dream breakfast? 1 egg, 3 apricots, a handful of slivered almonds, 2 tablespoons yoghurt, a few pistachios, 2 tablespoons of flour, 1/2 teaspoon baking powder, cinnamon and honey.


I would call this a delicious breakfast without a shadow of a doubt... Fruity, juicy, crunchy, nutty... This has got it all! Including a touch of cinnamon spice to make it especially nice! Yeah!


Start off by stirring the egg and the yoghurt together- preferably using a whisk shaped like a chick... It will get you the best results, for sure 


Next, add the flour, baking powder, cinnamon, a pinch of salt and sugar or stevia to taste- it doesn't take much more than a teaspoon of sugaring my opinion, as their is the fruitiness of the apricots already in there...


...and speaking of apricots, remove t)3 stone and cut each half of an apricot into 4 slices.


Pour the batter into a small saucepan and then add the apricot slices, swiftly, followed by the slivered almonds in the spaces in-between. Once the batter sets, pop the saucepan into the oven, at 200*C, for 2-3 minutes.


After 2-3 minutes, sprinkle with the pistachios, (which I made sure were cut in half) and honey and return to the oven for a further 2-3 minute until golden brown.


Looks good enough to eat, doesn't it? 


What a perfect way to start the day!
