Bee My Guest!

Honey-Glazed Asparagus, Tomato & Feta Cheese Tortillas


Yes, the bees were busy making these little suppertime snacks especially delicious this evening- the honey glaze is what made the flavors come to life and transformed something very simple indeed into something special!

The combination of Feta cheese and honey is a classic- the saltiness of the cheese is balanced and complimented by the honey in a magical way- and honey is something that I also find to be wonderful companion for asparagus. So combined with a little tomato for a nice, fresh component, this made for a very satisfying and somewhat different kind of snack... and perfect as an appetizer or party dish or a light Summer supper.


This was the perfect way to use up the last of the beautiful wild asparagus I bought on Saturday. It WAS very simple to make, still, it needed a little more preparation than simply spreading everything out on top of the tortillas and popping them under the broiler. This is how I put these little beauties together- in just 15-20 minutes...

First of all I blanched the asparagus stalks in boiling water for just a minute or so. I did this in my frying pan, pouring just enough boiling water over them to cover them and keeping them bubbling away on the hot stove for a minute, before simply pouring off the water... then back on the heat they went, with a pat of butter. I added a little salt, pepper, lemon juice and hint of nutmeg, flipped the asparagus around for a minute... and then out it came! And then in went the Spring onion! I had 2 finely sliced Spring onions and I gave them a quick sautée in the pan in the residual butter from the asparagus- no need to add anymore- this pre-cooking was just to get the onion soft, so that it would also become a little sweeter and more pleasant to eat- so, just one minute and out it came too!


Last into the pan were the sliced cherry tomatoes- with a pinch of salt and pepper, a splash of Tabasco and squeeze of lemon, these also had their 1-2 minutes in the pan before coming out before they became too soft. But now I could begin to assemble my tortillas and all of the ingredients for the topping were cooked and could therefore be zapped under the broiler at maximum heat- yay!

So I folded over the tortillas to make them a more handy size as well as a little bit sturdier for eating, then laid out the tomatoes first, then the asparagus on top of them. I then added a generous crumble of Feta cheese and on top of that, the Spring onion slices. A last sprinkle of black pepper, a nice drizzle of honey- and under the broiler they went, at full power, for 2-3 minutes- then out, quick, before they were burned to a crisp!

When they came out of the oven, of course the tortillas were still soft and moist- so that was the best time to cut them as they soon crisped-up again as soon as they cooled down and this way they didn't just crumble apart. So that was all there was to it- and the result was a splendid little snack-sized feast for the taste buds that I absolutely recommend you try out- because you and your family and friends are going to love it!
