What could be more refreshing than some paper-thin shaved fresh and tangy pineapple? And what could compliment it more than some coconut flakes? Well... That of course would be fine in itself... But of course we can do better!
The other ingredients as you already know and plainly can see, were chopped pistachios and a few leaves of huacatay, that lovely Peruvian herb that I introduced you all to yesterday!
Simply slice the pineapple as thinly as you possibly can and arrange it aesthetically on a serving dish. Sprinkle first with coconut, Au out a few leaves of huacatay decoratively and then add a nice drizzle of honey and the chopped pistachios.

combination of flavors and textures simply works... The sweetness of
the honey with the tangy and aromatic pineapple and huacatay and the
coconut and pistachio to add a little body and crunch... And you don't
need a single thing more!
Well,
you don't need anything other than a fork! And then you need to mess up
that pretty presentation, to drag each thin slice of rich and tangy
pineapple through the honey, coconut and pistachios... And to enjoy!
