Bake for Good

Semplice Fiocchi d'Avena, Banana, Cachi & Cocco al Forno
Simple Baked Oatmeal with Banana, Persimmon & Coconut

 

Same-same, but different, as they say... that's what this lovely baked oatmeal dish is. It needs no recipe really, it is just good, simple, common-sense and the best way to use up ripe fruit of a morning that I can think of!

Especially now that it is beginning to be chilly in the mornings!


 

I had a week old persimmon and banana- both a little over-ripe, but both still welcome guests in my fruit bowl, as they were by now so rich and sweet that they could be used in a dish such as this and eliminate the need for any extra sugar- which is a good thing for sure!

 

1 persimmon, 1 banana, 1 cup of oatmeal and 1/2 cup of coconut flakes... a little milk and cinnamon- a pat of butter for my baking dish- and that was all I needed to make a really satisfying treat this morning!

 

Of course you can sweeten this if you make it- or add honey or maple syrup at the end for example... but the simple truth of the matter is that this is a healthy and satisfying way to start your day whilst making a treat out of it- and so easy to make too!

 

Peel your fruit and cut them both into bite-sized slices... turn on your oven to get it hot, turn on your stove and get yourself 2 cupfuls of milk boiling... and prepare to make some breakfast!

 

Have your oatmeal, coconut and cinnamon ready- as soon as that milk comes up to the boil... in they go!

 

Once the oatmeal comes up to the boil, reduce the heat to a low simmer and let it bubble away for 5 minutes...

 

...and then add those yummy fruits- or whichever other fruits you may prefer to use... anything goes!

 

Once everything is nicely mixed together, it is ready to go into your lightly buttered baking dish! Next stop... oven!

 

Make sure to press everything down firmly and then pop into a hot oven, at 180°C, for 15-20 minutes, until the outside becomes toasted and golden brown... mmm!
