Simplicity Bites!

Simple Roasted Cauliflower


Who knew that the best possible way in the whole universe, to prepare cauliflower, could be the most simple of all possible ways? Forget about boiling or steaming it and filling the kitchen, the whole house... and maybe half of the street with that rather uncomfortable aroma- turn on your oven, get it real hot... and prepare to find out what you have been missing all these years!

At least that was the way it was for me this evening! I would have to say that the only cauliflower I really liked up until now, was the kind that my mother makes- first boiled and then dipped in a batter and fried. And that is because I probably only eat that every 3-4 years or so! So whether you fry it batter or crumbs, or cover it in cheese, basically with most preparations you are overpowering the cauliflowers own actual taste... which is easy to do because it is so mild. But then there is roasting it in the oven... and as I said at the beginning... who knew?


All you need to do, to prepare the ultimate cauliflower, is to turn on your oven full blast and get it hot, hot, hot and ready to go- I mean above 400°- no messing around! Then pop your cauliflower slices on to a tray as they are- with no oil, just a little salt, for 5 minutes. After that time, take them out and you will find that it is beginning to "sweat"- well and so would you in that kind of temperature! But seriously- after these first few minutes, the moisture in the cauliflower will begin to escape- and this is the best time to add salt and plenty of black pepper... and also a trickle of olive oil... and pop it back inside for another 5 minutes.

After 5 minutes it will be lovely and grown on top- time to flip it over and season the other side, then back again for 2-3 minutes to finish off. Now, you will be thinking to yourself- it will be dried out! But it won't! However crispy and brown it gets on the outside (mmm!), the inside is still sweet and juicy, but the flavor is intensified tenfold! It really is a wonderful thing! This is definitely my favorite way to prepare and enjoy cauliflower and I am sure you will love it too if you give it a go! So what are you waiting for??? Get to it!
