Garden of Eatin'

Mixed Salad with Cucumber, Cannelini Beans and Salted Ricotta


Amazingly, the sun came out today and decided to pay us a brief visit here in Frankfurt- and what a difference it makes just to have a break in the rain and a patch of blue sky! I know that many other countries have had heat-waves and droughts so far this year... but all that we have had has been cold and rain!

So today was a day for a light, fresh salad! Simple, fresh and just plain good on a sunny day. I chose this mix of local leaves and decided to pair it with some beans and ricotta cheese for a change- a wise decision in retrospect I must say!


No recipe here- just a simple and super combination! The beans came straight from the can- no hassle, no nothing! I used some of those extra-large cannellini beans and they were really delicious. To give them a little more flavor, I drizzled them lightly with olive oil and added a little crushed garlic and let them sit for 10-15 minutes.

I added them to the lettuce mix, along with the sliced cucumber and some fine slivers of salted ricotta cheese. Next came some finely sliced Spring onion and plenty of fresh oregano. I seasoned with salt and pepper, drizzled with olive oil, white balsamic vinegar and honey... and enjoyed! Simple- but simply good! And sometimes that is all that it needs to be!
