Egg Tortilla with Spicy Sausage, Mushroom, Mint & Salted Ricotta
Time for a quick and easy breakfast idea again! So you feel like scrambling a couple of eggs or making an omelette and a couple of rounds of toast? Well that was kind-of what I was planning on doing... not too much work, stress or hassle- it IS Sunday morning after all!
But with just a little THOUGHT, not even any more work, I rustled up this here, which is has the best of both worlds- and then some! A crispy tortilla base, savory eggy topping and a little spicy sausage and mushroom to make it more fun... in other words- a much better idea simply because it IS Sunday morning... and we deserve something a little bit nicer!
This is really easy to make! Just crack 2 eggs into a bowl and add plenty of finely chopped mint and a little chopped parsley. Beat well and season with salt, pepper and a little nutmeg. Next step...
Slice a little spicy sausage (this was an air-dried Italian sausage) thinly- 9-10 slices will do and pop these into a dry frying pan. Whilst they begin to sizzle, slice a mushroom finely and a couple of spring onions too. Add these to the pan as soon as the sausage begins to brown... out comes the sausage- in goes the rest!
Sautée the mushroom and onion for 2-3 minutes and remove them too- by that time, the mushrooms will have soaked up any remaining fat from the sausage and be soft and delicious.
Next, place your tortilla in the pan (off the heat), flatten it down and pour the beaten eggs over the top. I tried to avoid letting it get too close to the outside edge to ensure that I got some really crispy tortilla by not covering it all completely. Now arrange the other ingredients evenly on top and bake under the broiler for 2-3 minutes... ready!
Serve with a sprinkle of salted ricotta cheese and a little finely chopped parsley... and ENJOY!
