Pane Tostato con Zucchine, Gorgonzola, Pomodori Secchi e Olive
Rounds of Toast with Zucchini, Blue Cheese, Sun-Dried Tomatoes and Olives
Mid-morning snack time and literally nothing in the house. Or next-to. Seriously, I had a half a zucchini, a chunk of blue cheese and a couple of olives. The last couple of slices of "wonder-bread" after making that yummy English "summer pudding" last week. I am not sure that stuff even IS bread... looked just as fresh as it did last week! But am I one to despair? Indeed I am not! Behold, culinary recycling with a Midas touch, that managed to turn these pitiful ingredients into something akin to gold! (At least if you are hungry enough!!)
Cut out circles from your sliced bread using a glass, butter lightly and toast on one side under your broiler.
In the meantime, slice up the zucchini as thinly as you can a pop it into your dry frying pan with a sprinkle of salt for a couple of minutes. The salt will make the zucchini draw water and begin to cook and that is all you need to do for prep work.
Take out the toast slices, turn them over, spread lightly with mustard and a little honey and a little blue cheese and then lay on the zucchini slices. Sprinkle with salt, pepper and nutmeg and pop under the broiler until golden brown. Whilst they are still hot and the cheese is still soft, add some strips of sun- dried tomato, a little rosemary and black olives.
And there you go! Mid-morning munchies beware... you may scare me- but I will battle you and besiege you! Even if you do make my tummy rumble like Pooh bear sometimes!
And the moral of the story is: there is always something at home and always something you can make from it- and even in an emergency you can make it into something pretty damned good!
