Even when the fad concerns somet...I hate food fads. Even when the fad concerns something I know and love, because I know that come this time next year (or perhaps the year after?) All will be forgotten and the 'trendsetters' will have moved on to something else. For them, it's not really about the food, it's about fashion, just like cooking shows are really about entertainment, not cooking. Innovation isn't everything, especially when it's superficial. <br /><br />If you want to be creative, I like your approach: start with a grounding in tradition and innovate from there based on good instincts.
